Slow Cooker: Easy, Healthy Greek Chicken (aka Colorful Chickeny Stuff)

Easy, Healthy Greek Chicken Recipe! (Or, when describing to kids, “Colorful Chickeny Stuff,” which makes them love it already!)

I invented this dish about a month ago and it was a huge hit with my entire family—which, as you may know, includes adults, teens, and kids.

It’s super easy, really healthy, tastes delicious, and is a one-pot slow cooker meal that makes the house smell great!

 

Ingredients:

  • 2 lbs. skinless, boneless chicken breast
  • 2 tbsp olive oil
  • 1 can diced or chopped tomatoes, not drained
  • 1 small bag frozen spinach (or 1/2 of large bag), not thawed
  • salt, pepper, garlic powder
  • crushed or chopped rosemary (if using jarred, use about 1 tbsp, if chopping fresh, use 2 tbsp)
  • 1 chicken bouillon cube
  • 1.5 cup water
  • 1/2 box of orzo

Directions:

  1. Cut chicken into small pieces, about 1.5″ square. (See note in “Timing,” below, about browning.)
  2. Heat 2 tbsp olive oil in pan. Add chicken.
  3. Sprinkle chicken with salt, pepper, & garlic powder, & 1/2 of the rosemary.
  4. Turn chicken to brown other side. Sprinkle this side with pepper, garlic powder, and other half of rosemary (no salt).
  5. Once chicken is browned, place in slow cooker.
  6. Pour can of chopped or diced tomatoes, including liquid, over the chicken.
  7. Pour small bag of frozen spinach in too.
  8. Heat 1.5 cup water and the one chicken bouillon cube in the microwave for 3 minutes. Use fork to make sure bouillon cube is dissolved. Add to slow cooker.
  9. Mix everything. DO NOT ADD ORZO YET.

Timing:

  • If started early, cook on low all day. (Also, if you’re in a rush, you can skip browning the chicken and just place the raw chicken in the slow cooker with the mentioned spices, etc. But if you have time, I think it’s better with the browning.)
  • If started later in the day, cook on high 4 hours. (You must do the browning if starting late.)
  • 30 MINUTES BEFORE YOU’LL BE EATING, ADD 1/2 BOX OF ORZO. Stir in, replace lid, and put slow cooker on high.
